
I love Chai tea, especially the one from East is East, it's very strong and fragrant.
Here's the recipe I created trying to replicate it.
You can play around with the qualities of each spice depending on how you like it; for instance more peppercorns will make it spicier.
I highly recommend getting organic spices (Whole Foods on Cambie & 8th has them all).
Ingredients:
a medium piece of organic ginger, peeled and sliced
1 organic cinnamon stick
1 tsp organic cardamom seeds
1 tsp organic whole black peppercorns
1 tsp organic whole cloves
1 tsp organic fennel seeds
optional: tea of your choice (English Breakfast or Rooibos for decaf)
Put all spices in a mortar and crush with pestle. Make teaspoon heaping for spicier.
Instructions:
2 cups of water in a medium pot on high heat until it boils & then turn down to simmer
Add all ingredients to simmering water as you have them ready and then cover.
Let simmer 30 minutes or more (minimum 15 minutes if you’re short on time).
Add 2 cups of milk of your choice (I like Soy) and then turn the heat up and stir gently (to avoid boiling over) until it boils and then turn off.
Optional: add tea of your choice at the end so it doesn't become bitter - English Breakfast or Rooibos for decaf is good. (I don’t add tea anymore).
Add sugar to taste and ladle through a strainer into a mug and ENJOY!
Super cozy tea and delicious. Also great for sore throats and colds.
Once cool, transfer into jug and can keep in the fridge to re-heat.
